So I bought a bubble waffle maker at the local supermarket. My daughter ordered bubble waffle from the bubble tea place the other day and I was so curious to taste one, that I had desided to order some for us all that afternoon. Then I spotted the machine and made a fast calculation: if I ordered 4 bubble waffles it would cost me the same as buying the waffle maker. So I bought it and have been making bubble waffles since.
You can make the waffles using a normal waffle mixture. I tried that, they were ok. Today I got it in my head that I should make them with a Thai/ Asian taste and texture. So I made a smooth batter of two eggs, 1 cup sugar, salt, 250 ml coconut milk, 2/3 rice flour, 1/3 glutinous rice flour and three spoonfuls of tapioca flour. The black sesame seeds were added when pouring the batter in the machine, as I wanted them on the outside, so they would add with a toasted flavor.
I added pandan extract to the last batch- they turned out fragrant and delicious!
The waffles are a perfect mix of super crispy edges and gooey middle. Break them apart and start munching- trust me, you won’t be able to stop!
